Keto “Roasted Potatoes” That Aren’t Potatoes
Everyone says radishes taste like potatoes when you cook them… I wasn’t convinced. So I tested one of the most popular keto potato hacks: roasting radishes and finishing them in bacon grease with garlic and herbs.
The result? These don’t taste like radishes anymore — they taste like garlic bacon breakfast potatoes.
They’re crispy on the outside, tender inside, and perfect as a keto side dish with steak, eggs, or breakfast.

Garlic Bacon “Roasted Potatoes” (Radish Version)
Ingredients
3 lbs fresh radishes, trimmed and halved or quartered
2 tbsp olive oil
2 tsp kosher salt (divided)
5 strips thick-cut bacon, diced
1 tsp jarred minced garlic
1 tsp fresh rosemary, finely chopped
½ tsp thyme
½–1 tsp apple cider vinegar
2 tbsp fresh parsley, chopped
Fresh cracked black pepper
Instructions
1. Roast the Radishes
Preheat oven to 450°F and place a sheet pan inside to preheat.
Toss radishes with:
olive oil
1½ tsp salt
Spread on the hot pan in a single layer.
Roast 25–35 minutes until:
lightly browned
slightly shriveled
no longer glossy
This step removes moisture and helps the radishes develop a potato-like texture.
2. Cook the Bacon
While radishes roast, cook diced bacon in a skillet over medium heat until crispy.
Remove bacon and leave about 1–1½ tbsp bacon fat in the skillet.
3. Finish in Bacon Grease
Add roasted radishes to the hot bacon fat.
Let them sit 2–3 minutes without stirring so the cut sides develop crust.
Toss once.
Push radishes to the side of the pan and add 1 tsp minced garlic to the bacon fat.
Cook garlic 30–45 seconds, then stir everything together.
Add rosemary and thyme and cook 1–2 more minutes.
4. Finish the Dish
Turn off the heat.
Add:
crispy bacon
apple cider vinegar
parsley
black pepper
Toss everything together and taste for salt.

~26 g net carbs
Per serving (4 servings):
~6–7 g net carbs
Why This Works
Radishes are about 95% water, but roasting them at high heat drives off moisture and softens their natural peppery flavor. Finishing them in bacon grease and garlic adds the savory flavor you normally associate with roasted potatoes.
